New Van

Well, today is the day!  Thanks to the little old lady who didn't like stop signs, we get a newer van today.  Instead of an 07 with 60,000 miles, we get a 2010 with 39,000 miles.  Still a black, Dodge Grand Caravan SXT, but without the DVD player and 6 CD player... that's a bummer!  They were nice to have, but not necessary.

Can't wait!  Hope my back cooperates!  Long trip with my back spasming like it is!  Got a chiropractor appointment first, so hopefully that helps!!

Time to get rid of this Charger!  The kids love it!  They want me to keep it, but it feels like driving through a tunnel!  There are soooo many blind spots, I hate it!

Greek Chicken Roulades with White Wine Reduction

Greek Chicken Roulades with white-wine reduction.
Look for chicken breasts that are at least six ounces in weight - - they’ll be big enough to hold the filling when pounded thin and rolled.

Makes 2 servings
Total time: 30 minutes

12 pitted kalamata olives, divided
3 Tbsp. fresh bread crumbs
3 Tbsp minced oil-packed sun-dried tomatoes
1 Tbsp. minced lemon zest
2 gloves garlic
1 tsp. dried oregano
2 boneless, skinless chicken breast halves (6 oz. each), trimmed of fat
2 tsp. extra-virgin olive oil
1/4 cup diced onion
1/4 cup dry white wine
1 ½ cups low-sodium chicken broth
1Tbsp. fresh lemon juice
1 tsp. cornstarch

Dice 6 olives; set aside. Process remaining 6 olives, bread crumbs, tomatoes, zest, garlic and oregano in a food processor until minced.

Using a meat mallet, pound chicken between plastic wrap to a thickness of 1/4 inch. Spread olive-tomato filling on chicken.   Roll chicken; secure with toothpicks.

Sauté roulades in oil in a large nonstick skillet over medium-high heat until browned, 4 minutes. Remove chicken to a plate. Add onion to the skillet; sauté 2 minutes. Add wine; cook until liquid is reduced by half, 1-2 minutes. Add broth. Bring mixture to a boil; add diced olives and chicken rolls.

Cover skillet; reduce heat. Simmer chicken rolls 10 minutes; remove chicken to a plate. Whisk together lemon juice and cornstarch; stir into sauce in skillet.   Simmer for 1 minute. Slice rolls; serve with sauce.

Per service with sauce : 389 cal; 10g total fat (2g sat, 6g mono, 2g poly); 102 mg chol; 770 mg sodium; 19g carb (2g fiber, 5g total sugars); 45g protein; 3 mg iron; 64 mg calcium.

Stop signs are NOT optional!

OK, people, stop signs are NOT optional!  My wonderful Dodge Grand Caravan in a heap of junk because some little old, sweet lady decided that stop signs were only a consideration!  After Tboning her at 40mph, her jeep spun around and took out my whole drivers' side, all the way back to the gas tank!  For one little missed stop sign, my van suffered serious front end damage, the transmition was leaking, the gear shift seperated from the transmittion, could only stop the van from moving by taking out the key.  Both front doors had to be forced open.  Driver's side sliding door WON'T open.  Brute force got the passenger's side slider opened.  The back side opened and closed manually but doesn't line up.  We don't find out until later today if they are declaring it totalled, but it is sure looking that way!

Luckily, Dodge Grand Caravans are well built and even though we had all that damage, we walked away just fine!  Now, we are looking for another!  I am hooked!!!!

Life is Good

Two weeks, two grandkids' birthdays!  Spoiled kids, family, food, and fine weather!!!  What a great mix!  Well, the caribbean nachos were kind of dry... I have never seen dryer mangos in my life!!  Anyone got any great ideas on how to bring flavor out of juiceless mangos?

Mom came out last week for Leigha's birthday.  Mom also went with my scout troop to the Native American Festival in Saratoga.  What a cold, but fun weekend!

Dad and Karen came out this weekend for Chase's.  Dad wasn't feeling great so they left early today.  Kinda bummer-ish... BUT THEN... Peter and I went on a motorcycle ride to the High Peaks region of the Adirondacks!  Since he has upgraded his bike to a Honda Goldwing, we can ride forever!!  Today it was about a 6 hour trip!  High Peaks at High Color!  BEAUTIFUL!!!

My parents got to see our new house with us all moved and and somewhat organized!!  2 happy munchkins, 2 happy parents and a housefull of love!  What an awesome way to start October!
