Caribbean Chicken Nachos

Ingredients:

4 oz. deli roasted chicken breast, chopped
2Tbsp finely chopped red onion
1/4 tsp. dried thyme
1/4 tsp. allspice
6 cup tortilla chips
1 1/2 c. shredded monterey jack cheese with jalapeno peppers
1 medium mango, seeded, peeled and chopped OR 1 C. well drained and chopped canned peaches
1 TBSP chopped parsley (optional)


Directions:

Preheat to 350.  In a small bowl toss together chicken, onion, thyme, and allspice.

Spread chips on an 11 or 12 inch oven proof platter or an ungreased baking sheet.  Sprinkle chicken mixture over chips. Top with cheese (You know, like nachos.)   Bake for 5 to 7 minutes or until cheese melts (Or, microwave for 1 1/2 to 3 minutes).

Sprinkle with mango or peaches and parsley. Serve immediately.

  1. OK, I tried this tonight and here are my thoughts....I doubled this for my family and we had enough, but Peter wasn't here. Keep in mind serving sizes. If have the nachos as a meal, you'll want more. At least we do, with 3 teenagers!!!!

    Also, I didn't have the thyme or allspice so I used cumin, blackened seasoning, cinnamon, nutmeg, cloves and black pepper. I also added a yellow pepper. Oh, and I mashed the mango and mixed it with the parsley before I topped the nachos. It was way YUMMY!!

  2. Another update: Peter was super busy today and wouldn't be able to eat with us. Because this was so yummy, I mixed up a batch for him to try, using the modifications I used earlier, except this time I used 1/2 a red pepper instead of the yellow one. I mixed up the first ingredients and let it set in the fridge for a couple of hours, while Peter was at karate. I also used extra mango. This time was even better than the first!!!

    Peter said feel free to make this again, anytime! Since he is such a food snob, that is a BIG compliment!

  3. I made this one again last night. This time I added red, orange and yellow peppers, jalapenos, guacamole, and lotsa cumin!! AND, I used "A hint of lime" chips.

    YUM!!
